Chickpea Salad

Ingredients

  • 1 can Chickpeas (Goya)
  • 8-10 Cherry tomatoes
  •  1 medium sized Red onion sliced
  • 1 medium Avocado sliced
  • 1 small bunch Cilantro 
  • 1 Cucumber 
  • Feta cheese (if desired)
  •  ½ Lemon
  • Salt according to taste
  • Crushed black pepper

Preparation time: 1 hour or less 

Serving: 3-5 people

Preparation

Drain the chickpeas and rinse them thoroughly. Add sliced cherry tomatoes, red onions, cilantro, cucumber and cubes of feta cheese (or plant-based cheese). Mix them well. For dressing, squeeze ½ lemon and add salt and crushed black pepper. Mix all the ingredients well and it’s ready to serve. Enjoy!
