Quick & Hearty Bean Kale Soup

Ingredients

  •  1-2 cups of spinach (frozen used) 🥬
  • 1 cup mixed veggies (frozen used) 🌽
  • 1 1/2 broth (vegetable broth used) 🥕
  • 1/2 cup red kidney beans *plant based protein* 💪
  • -1/2 cup of water 
  • -1/2 chopped onion
  • 3 cloves of chopped garlic 🧄 
  •  Tsp. onion powder 🧅
  • salt and pepper (to taste)🧂

Cooking time: 20 minutes 

Serving: 2-3 people

Preparation

This recipe is super useful because it is so quick yet hearty and healthy! It is perfect for a cold night at home, or a quick pick-me-up lunch.

Add all ingredients once washed & prepared into a small pot. Let it come to a boil, then leave it on low heat for 15 minutes. Season with salt, pepper, garlic, and onion powder as directed above.
