Chickpea and Avocado Salad

Ingredients

  • 1 15 oz can of chickpeas (drained and rinsed)
  • 1 medium ripe avocado, diced
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • In a large bowl, combine the chickpeas, avocado, cucumber, tomatoes, and red onion.
  • Drizzle with olive oil and lemon juice, and sprinkle cumin powder, salt, and pepper.
  • Toss gently to mix.
  • Garnish with fresh parsley before serving.

Ready in 15 minutes
