Chickpea “Tuna” Sandwich

Ingredients

  • 1 can chickpeas, drained

For sauce:

  • 3/4 cup cashews
  • ½ cup water
  • 1 tsp nutritional yeast
  • 1 tsp dill
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp apple cider vinegar
  • Salt to taste

Optional toppings:

  •  Relish
  • Lettuce
  • Tomato
  • Black pepper

Servings: 2 sandwiches

Directions

  • Mash chickpeas in a container.
  • To a blender, add sauce ingredients and blend on high for 1 minute or until smooth.
  • Mix sauce into mashed chickpeas.
  • Enjoy on a sandwich with toppings of your choice!
