Vegan Mac & Cheese

Ingredients

  • 2 servings of cooked macaroni shells

For sauce:

  • 3/4 cup cashews
  • ½ cup water
  • 2 tbsp nutritional yeast
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt to taste

Optional:

  •  Dash of turmeric for color

Servings: 2

Directions

  • Boil pasta following packaging directions, then set aside.
  • To a blender, add sauce ingredients and blend on high for 1 minute or until smooth.
  • Combine the pasta and cheese sauce.
  • Top with more paprika if desired, then serve!
